iTunes to Books audiobook management issues

I can't combine Mp3 files into one audiobook, they sit there as endless clutter.

I can't find that useful window that existed in iTunes to increase playback volume, rename, add a jacket image..

Downloaded files sit in a folder called iTunes Media/ audiobooks, but nothing can be 'done' to them?

Nothing drag n' drops into my iPod or iPhone, I have to use lists on finder... I used to do this visually from a grid ?

Please don't tell me I can do this in phone mirroring, it doesn't work.
