Hello once more~ Go to Settings > General > VPN & Device Management, select the configuration profile, then tap Remove Profile. See if that helps.

If Data Won't Work:

Contact you Carrier, If Data is not working. It may be an issue with your eSIM or SIM card. Go to their homepage on the Internet and look for their Contact Us info.

I'm glad you took Katana-San's excellent advice and it worked! VPN on iPhone causes all sorts of issues, like what you experience with connecting to Wifi. They are completely not needed and truly don't provide the security you think they may. iPhone has it's own built in protection, which is more secure than a VPN. Now that you've removed the VPN profile, don't reinstall it.
