Migration assistant from two Macs to my new Mac

I have a flexgate 2017 MBP and an M2 Mac mini. The 2017 MBP was saved to a drive using SuperDuper. I have been using my M2 mini for about 16 months.

My new Mac mini will have 2T storage.

I would like to first move the 2017 MBP files and system settings (Ventura, but we have the energy saver settings that Apple decided we did not need in Ventura for whatever came before. We turn on our computers automatically each morning and shut them down each night.)

I would then like to migrate the M2 mini because it has far more of the software I use for coding and my AI work.

I worry that doing the M2 2nd will cause it to write over the system settings and all the mail accounts etc. from the 2017.

So, can this be done?

Better to do 2017 MBP migration 1st?

Better to do M2 mini 1st?

Thanks in advance.

I am not seeing a way to migrate JUST my mail. I handle all my and my wife's mail while she is studying coding. We have about 20 accounts. Please I do not need advice about how many accounts I have.

com.apple.mail.plist does not exist in 15.3. I do not have enough room to use migrate assistant.

or is there a way to use migrate to only migrate mail?
