I recently updated my Macbook, and the Notes app has changed. I used to be able to view a note directly in the Notes app itself, but now it opens a separate window via double-click, which is highly annoying. Is there a way to change it back to the old version or change it in this new version via settings or something?

It sounds like you may have been using Notes in full screen mode in the past but a different windowing mode now. Or, you can Use apps in full screen on Mac - Apple Support to go back to the behavior that I think you are describing.
