Numbers will not sort. I've tried with multiple brand new documents. Nothing has been changed as far as merging cells, etc. Even so, the merge cells and unmerge cells option is disabled. But these are brand new docs and that shouldn't be an issue...

Are you trying to sort?
Or are you trying to merge and unmerge cells?
Those are very different things.
In general you do things to a document by first selecting cells and then performing an action on them.
If you haven't done so already be sure to have a look at the User Guide at Help > Numbers Help in your menu.

I’m trying to sort but it will not let me. The main reason I get for this possibly happening is that cells have been merged. I haven’t merged any cells and I’ve tried starting over with a new document multiple times just in case I accidentally did something that caused cells to merge (which I know I didn’t). Same problem. If I try to “unmerge cells” anyway both that option as well as the “merge cells” option are disabled.
Are you selecting cells first? Screenshot?
