Hitting "Undo Send" in Apple Mail loses just sent email

I have had numerous occasions to hit "Undo Send" in Apple mail within seconds of sending an email (delay is set to 20 seconds). Invariably, the email disappears permanently. Sometimes, an earlier edit can be found in the Drafts folder but upon editing that and saving it, it also disappears.

Using Sonoma 14.7 but has happened on previous OS as well.

This is a deep flaw in the Apple Mail program that I am sure is causing others similar frustration and distress. Do we need to migrate to Outlook (gag me)?
