My Epson 700 v isn’t compatible with the newer OS on my Mac Mini
My older Epson scanner isn’t compatible with newer OS on my Mac Mini. Is there a work around?

It's compatible. Epson drivers exist for your V700 on macOS Sequoia:
- V700_V750_EScan2_6645_AM.dmg
- ESICA_5.8.23.dmg
Alternativly, you could also use Vuscan, as has already been suggested.
