On what device are you looking for this? On the Apple TV box (which model), in the Apple TV app on a smart TV (which brand and model), or on a different device (please specify)?
The items that you have added to your Watchlist, and the compatible items that you have started watching but have not completed yet, those items will be listed in the ‘Continue Watching’ (Up Next on older OS versions) row in the Apple TV app. Movies that you have completed will be removed from that list. TV shows will list episodes there, and if you have completely seen all available episodes, the listing will be removed from that list, until a new episode is released. Rewatching something will reset the watch progress for Continue Watching.
See it as a queue list of things that you may consider watching next at any time. It is not a favorites list, and it will be frustrating to try to use it that way. Nor is it an easy entry point to an episode overview.
There is a main Continue Watching list in the Home tab of the Apple TV app.
There is a secondary Continue Watching list in the Apple TV+ tab of the Apple TV app, filtered for Apple TV+ content.
The row is horizontally scrollable, to reveal more than fits in the screen width (if applicable). iPhone, iPad, Mac have a “>” button next to Continue Watching/Up Next, where you can see the list content on a separate page, instead of in one row on the previous page.

I added to my watch list, but it doesn't show there. Using a roku. All I can watch is the recap
You should be able to select if you want to watch the full replay in English or Spanish, or to watch the recap, or select one of the highlight moments. The recap may be default from the big button overlay once the match has been played, but there are more options. Scroll down a bit from the splash image, to see all the watch options.
1. It sounds dumb once you know it, but for a new user, nothing on the top page indicates pressing the down arrow on the remote with "scroll down" as you say. I was unable to figure that out for probably 20 minutes pressing the info button, going back and forth
Please let the Apple app developers know about this confusion through the feedback form.
The only hint that I can see, pretending not to know this already, is a small section of the tiles at the bottom of the screen, indicating that there may be more below.

I think it should pop up there in Continue Watching; that is how it is supposed to work, for any game that you added and that you haven’t watched yet. I’m not an MLS subscriber, so this is a bit hard to test on my side.
Scrolling down on this page also shows highlights from the game and showing the results and therefore I know the results prior to watching the game. :-(
Better way to ask my question: Is there any way I can watch the game delayed without knowing the results?
There is a setting to hide the score(s). But the highlights clips might still be kind-of a spoiler, if you read the clip titles, as that may mention which player scored against which team.

other streaming companies like Netflix.

Thank you! I submitted the bug to the developers where MLS games added to watch list in the Apple TV app when using a Roku don't show up in Continued Watching.
That will solve the other issue. TBD if it gets any action, but at least I tried. :-) Given MLS will be on Apple for another 8 or so years I really hope this gets fixed. Sadly, the experience is a significant downgrade than the previous solution where I could easily watch "tape delayed" without all the spoilers.
Note, yes I turned off show scores, but as you say, showing scores and key plays in highlight videos defeats that. :-(

I recall a Magnum PI episode, where the titular character taped a game to watch later, due to PI work getting in the way, only for the score to be spoiled by one of his friends in the final scene, I think by Higgins, the unlikely character that wasn’t in on keeping silent about the score.
For sure this is a thing and much bigger than 20 years ago or whenever that episode was shown. Friends of mine have "blocked" their friends after repeated violations of a request because certain individuals thought it would be funny to spoil the outcome of a game when a dad planned to watch a game later, they were excited about to prioritize a kid's birthday party.
