How can I change default font in Pages '09 on macOS High Sierra

I am using Pages '09, version 4.3 there is no setting in Preferences to change the default helvetica font. I'm working in OS X 10.13.6, High Sierra and cannot update further on my old Mac tower. Is there a wat to change the default font?

You create a new document and then set the header, footer, and paragraph styles to Helvetica and your desired font size. Then save that document as a custom Pages '09 template whose name bears Helvetica so you know which template has this default font.

I just created a new document with Pages '09 v4.3 on High Sierra 10.13.6 and all of my paragraph, character, and list styles default to the Helvetica font. This is true when I click in the Header or Footer fields too.

A current Pages user guide is wholly inappropriate for the entirely different Pages '09 application. Unfortunately, one can no longer link to the Pages '09 User Guide on Apple servers as they have drastically reduced and reorganized documentation content. I refrain from linking to other non-Apple sources that still host the relevant Pages '09 User Guide.
