I want to create a recipe folder with sub folders for various types of recipes such as vegetables, meat, etc. How do I do this with Pages?

It would be far simpler to use the strength of the Finder (e.g. New Folder ⇧⌘N) to build your intended recipe folder hierarchy than attempt this in Pages from a File chooser Save dialog by using the New Folder button there.
Take into consideration that the last folder save location will be used by Pages with subsequent documents until you change the folder location in the Pages Save dialog. Very easy to have documents end up in the wrong folder location based on your intended folder organization and Pages behavior.
