Backing up iPhone with older iOS
I'm using iPhone 12 Pro Max with iOS 15.6.1. Is it possible to use iTunes 12.13.4.4 to back up the device to my Windows 10 PC?

That sort of issue can be difficult to sort out given all the many "moving parts" in Windows, but perhaps this will help:

Note that if you have the newer Apple apps - Apple Music, Apple TV, and Apple Devices - those take over many of the functions formerly in iTunes. You'll use Apple Devices to sync and back up.

I only use iPhone and iPad for my Apple products. I allow my device to be connected and trusted in my PC and vice versa. The phone is charging and it shows pop-up to let PC access medias and photos. It just won't appear on my iTunes.
I have Apple Music installed on my PC. Does that make a difference?

I don't believe it's possible to customize where Apple Devices stores the backup, but since I don't have a Windows system to test, I can't say with certainty. Perhaps someone else here will know of a workaround.

My iPhone doesn't appear on my iTunes at all. Even after I change cables and USB ports.
At first it says I have to upgrade my iTunes, so I did. But nothing appears now.
Oh wait. I downloaded Apple Devices and now it shows the backup page. But can I relocate the folder to which the data will be stored?
