I've perfected my document in Pages, but when I save it as a PDF, the document won't update. The PDF thumbnail shows the updated document, but when I open it, it is the same as ever. I do pay Adobe a monthly subscription, so it should not be that which is causing it. Fortunately I can still print from the Pages document.

Only Pages can generate a PDF from a Pages document via its Export To > PDF > Save… steps. No Adobe product can open a Pages document nor generate a PDF from it. I don't have Adobe Acrobat Pro, so cannot tell you what happens if there is a Pages > File menu > Print… > PDF > Adobe PDF line item in that sub-menu.
Adding to my previous content, If you have a PDF open in Apple's Preview, make changes in the Pages document, and export to PDF with replacement, the PDF content will automatically update while opened in Preview. It will not do so when the PDF is opened in any other non-Apple PDF reader or editor.
