Small Tavel Projector:
I have one of those little Brookstone brand projectors (the lamp only lasts so long), and this is the adapter that I use: USB-C Digital AV Multiport Adapter - Apple. It has a female USB-C port, so that you don't lost the charging feature of the port you plug it into on your Mac. The projector is plugged into the HDMI port, and all works like a charm. The protection does 6 feet diagonally from just 8 feet away.
As for mirroring it...
Hold Down [command + F1]
Determine what input the projector requires then purchase the appropriate cable (and adapter, if necessary) and connect it to the mini's Thunderbolt or USB-C port as you would a monitor.
