Restore deleted files from iCloud using Time Machine backup on Mac mini

Hi, I deleted 30 GB of files from my iphone, not knowing they will also be deleted on every other device. I tried to restore them with icloud drive, but only contacts, bookmarks etc. were restored. Backup was turned off the entire time. Then I tried to restore my mac using time machine. The result showed midnight last night as the latest backup - 3 hours after the mishap, so not helpful. I tried going back one day, but the next backup showed from August '24. My mac is set to back up every hour, then why is there a 4 months gap? Please help! Thanks for your time.
