Transferring Audio to mp3 on Macbook Pro

I have a number of audio cassettes I want to convert to mp3 format. I'm using QuickTime Player 10.5 on a MacBook Pro (macOS Sequoia 15.1.1). How can I accomplish this? I am trying to use the audio line out from the cassette player to the USB port on the MacBook. But that doesn't seem to work.
