MacOS Sequioa too slow need to backlevel to Big Sur - best method on iMac ?

Recent upgrade to Sequoia, in hopes of performance improvement, results in very slow performance. AM shows lots of stuff running, which on investigation proves to be things I have no use for. To me it is bloatware

but for others it may have uses. There appears to be no way to customize the features that MacOS provides.

So for me I need to go back to 11.0.

iMac 27″, macOS 15.1

You have to erase, reformat, initialize the parent drive as new from Recovery/Internet Recovery
