If that MacBook Pro has a plain M3 chip, you can only use two external displays when the lid is closed. You will also need to be running macOS Sonoma 14.6 or later (which, from your tag line, it appears that you are).

Use dual monitors with your MacBook Air and MacBook Pro with M3 chip - Apple Support

MacBook Pros with M3 Pro and M3 Max chips can drive two external displays with the lid open.
