I am trying to update my MacBook Pro with the newest update, and it has been over 2 1/2 hours and it is stuck half way in the update. I have restarted my Mac by holding the power key, but when if turns on, it takes me to the sign in screen, which I do, then goes back to the black update screen with my profile pic with the status bar still at halfway

Granted it seems a long time...
What happens if you let it finish the install?
You can try rebooting into SafeBoot mode and compare your results
