You don't need to install the Hint App to cancel the subscription. It is most likely that you signed up for the subscription on their website through a link that was clicked. Yes, they do also have an app, but the website subscriptions are cancelled on the website. With any website subscriptions, it bypasses Apple's ability to cancel it. Hint has this information for cancelling the subscription using their chatbot, it is not done through their app.
