I’ve started to receive Screen Time requests from my daughter via iMessage and the requests are being automatically approved. At 12:01 in the morning. While she is sleeping

I assume you mean the Ask to Buy requests. Not sure what you are seeing where they are automatically being approved at 12:01, do you maybe have a screenshot without any personal information to visualize what you are seeing. Normally when you approve the request, the app is automatically downloaded to the child's device.
