Keychain Secure Notes and Apple ID

I'm sure this has been addressed, but for my clarity: I'm struggling with the new Passwords Application on iMac. A techie I am not. Keychain Access must now be via Spotlight, correct? I used to keep a "manual log" of all my passwords in keychain secure notes - just in case. Now, from what I see, there is no way to add a secure note directly to keychain, am I again correct? For my purpose, KA seems a useless function. I have read that this can be done in "Notes": also correct? Can these notes be made secure? How to keep the manual log of all passwords?


Is there still a way to actually view my Apple ID password? Used to be System Settings > (name) Apple Account > Sign In and Security. Now all I see is a way to reset if forgotten. Thanks!
