When my old Macbook Pro stops working, I still want to work on many of my Garage Band files on there. I think they're saving on Time Machine back ups, but there may be an issue with the back ups.
Should they be saving on Time Machine? Is there another way to preserve them, so I can still work on them?

I've never opened/pulled anything from Time Machine. Are you saying I'll definitely be able to open it on a new device to be able to work on?
Assume the same goes for iTunes content?
You can get about everything, it is the best procedure when you get a new Mac, highly regarded by most folks around here:

Any files you create should be saved by Time Machine.
