If I run a family iCloud and I disable my wife’s iCloud, will the data move or will it be lost?

My wife has iCloud separately and I have iCloud separately.

What happens if I sign out of iCloud? I’m currently using my mom’s Apple ID because we bought this phone on a family plan. I would like to use my own Apple ID. I’m wondering what data I’m going to lose if I switch accounts? Does everything such as contacts and text messages save locally to this phone?
