Setting up child's watch and iPod

My 8yo daughter has had an iPod for a while, and we just got her an Apple Watch. I'm trying to set up the watch and everything was going fine. I decided since she can access a calendar on her watch it would be good to share with her the Google calendar we use for her extracurriculars and such. I created a Gmail account for her, and added the shared calendar to it. I can see all of this worked just fine when looking at her Google account online. However, when I went back to her iPod to add the new email account her profile (where it says Apple ID, ICloud+, Media & Purchases) is grayed out. I can't make any changes to it. When I tried to add it in Settings > Mail > Accounts only one is showing, and this page is also greyed out. Same situation under Settings > Calendar > Accounts. Also under Settings, Messages, FaceTime, and TV provider are greyed out. I've looked on my phone under Family Sharing and I don't see anything I can alter there that makes a difference. On her watch I only see her iCloud account as an option.

This is driving me batty! Any idea how to move forward on this?
