apple mail image attachments too large
whether I drag the attachment onto the email or ask apple mail to attach it, the images are much large than they should be

With that image attachment in the Apple Mail compose window selected, you should see an Image Size: selector on the right side of that window offering small, medium, large, or actual size options. Take advantage of that feature.
