No Problem. Simply transfer any subscriptions or bills that you have set to AutoPay with Apple Pay to use another payment method. After the subscriptions on your device have been cancelled, you can remove all cards from your Wallet app if you want to do that as well.

Are you talking about subscriptions you have through the App Store? If so, you have to have a payment method attached to your Apple ID in order to have them at all. But that's not really Apple Pay.

Apple Pay is something you use in stores and online to pay for things. If you don't want to use it, don't.
