Go to Settings > [name on top], and scroll to the bottom to Sign Out. If you are not given that option or your name is greyed out preventing you from tapping on it, then you most likely have Screen Time restrictions turned on. You can go to Settings > ScreenTime, and scroll to the bottom to Turn Off Screen Time as long as you know the passcode.
