Can I remove the "pronoun" field from Contacts?
I just noticed that a new field in contacts is set by default on the iPhone. How do I delete this?

You can’t delete the field. You are not required to use it, just like you are not required to use any of the other fields available for contacts.

As long as you do not use it when adding a new contact, you will never see the option when viewing the contact. It is just that simple. If a pronoun has not been chosen, then you are not seeing it when you are looking at the Contact, so there is nothing that you would have to remove. You cannot change the default items when adding a contact.
You cannot. You can offer Apple your opinion in the link below. But with so many people using that field, I doubt they will remove it. Your best option is to simply not use it.

Technically speaking none of the fields in the Contacts app are "set by default." The fields are optional;l and if one doesn't put any data in a field that field will not appear in the saved Contact. The OP says he/she doesn't want to scroll past those fields when creating the contact. I understand that but those field choices will only be seen when creating or editing the Contact. After a contact is saved the unused fields disappear.
Some might prefer to have a Setting for the Contacts app that allows to set in advance those fields one wishes to see and/or use. But at present this option is not available.
I put in a case with Apple and I am writing them a letter, but my ask is a little different on a Mac you can disable this option so you don’t see it at all on contacts, I am asking them to do the same on iOS. This field is useless to me. Hope that helps . Oh and support will give you the address when the take the feedback
Select Edit for that contact and then tap on the iPhone and change it to what you prefer.
Everyone knows they aren’t required to use a Field. There are a lot of Fields that I don’t use in Contacts. It would be great if I didn’t have to always scroll past them to get to the useful Fields.
