before I go to bed I always charge my watch to 100%. I noticed that sometimes it actually discharges instead of charging. I reseat the watch and keep checking and it eventually charges to 100% it always lights up and shows my it’s charging but sometimes it lies.

If you use the correct Apple puck and ensure you hear the ping after a second or two it should always charge.
Otherwise try a different charge brick.
Then another cable.

Thank you for that, I have never heard a ping when charging. I’m currently using a charging device that can charge phone, earbuds and watch. I used to use the apple puck (great description) but not now, could be part of problem. I use the puck in my car.
Yes, third party chargers can be cranky.
