colour wheel disappeared keynote

I am using Keynote on an extended display (projecting to screens and a 2nd monitor.

The colour wheel for Keynote has disappeared when wanting to format text, backgrounds or shapes. I haven't seen any other recent posts on this so assume its a specific problem with our set up.

Anyone have any idea how to help?

I can no longer 'gather all windows' as I previously did as now using Sonoma and can't find that function
