I am unable to use the Insert > Symbol function on MacBook Pro

I am unable to use the Insert > Symbol function. At first the Symbol function was greyed out, I found help on the internet to double click in the cell I need to insert a Symbol witch removed the grey out, however when I click on the Symbol icon it didn't drop down a screen with Symbols to insert. Urgently need for my Statistics class assignements.
