How do I stop my iPad from updating?

i didnt expected that my ipad will be asking for restoring since i just wanted to update it i havent backed up anything and it doesnt allow now so can someone help me to just turn off the current updating process from my ipad so i could back it up and later restore it fully cuz i really dont wanna lose any information from my ipad
