Mac OS Reinstall Challenges

I sure hope there is a Guru out there that can help. I've read this thread through and through and it does not address my issue. Close, but no cigar.

I am attempting to reinstall High Sierra from a flash drive to a 2010 Macbook Pro. The hard drive has been erased. When I get to the installer the message I receive is "The disk doesn't use the GUID Partition Table Scheme. Use Disk Utility to change the partition scheme. Select the device containing the disk, click the Erase button, select the Volume Schemem and then click Erase."

When I go back into Utilities, there is no way to change the partition scheme. The choice is not even available to me.

Is there someone brilliant out there that can help me PLEASE????

The only destination option appears to be the internal Hitachi drive. Select the Hitachi drive and erase it as GUID partition and MacOS Extended (Journaled). If successful, quit Disk Utility and select "Install macOS" option to proceed with the install to the external Hitachi drive. Erasing the drive will destroy all data on that drive.
