Notes crashes when deleting or editing pasted content.

Me too, same exact thing happening. Began roughly in the last two weeks. Attempt to edit existing notes with backspace deleted, select line delete or otherwise edit and app crashes in a micro second. Sometimes I can see the text deleted prior to the crash, sometimes instantaneous crash. It’s so bad I’m actually considering purchasing an Android as I rely quite heavily on notes to get through any given day. My second brain 🧠 I can’t go in much longer this way without an iOS update fix. Did try deleting and reinstalling app, turning off iCloud backup and turning it back on to repopulate the notes. Definitely unwilling to reset my entire iPhone to factory fresh and reinstall my entire life back into my phone over an existent notes app that should be bread and butter for Apple. At that point I’ll just migrate to a Samsung. Let’s go Apple!
