Highlighting in apple books app not working
I start the process of choosing the text I want to highlight. But as soon as I click the word ‘highlight’ the option disappears.

Try a forced restart: Force restart iPhone - Apple Support
Hold that third button press until the Apple logo appears. Continue to hold that third button press past any sliders that might appear.
If that fails to resolve this, check with Apple Support.
