Sign up for Apple Arcade. You don't have to purchase any of the games and they are all ad free.

Other than that, it will depend on the game you are looking at. Some developers have a purchase price for the game and will not show ads. Some will be free to download and display ads with an options to remove the ads for a small price.

When viewing games on the App Store, you will also get a description of the In-App purchases that are available. Many of them have an in-app purchase to remove ads. A lot of developers use this option to provide a free version of a game where they can still get paid by offering ads, and will give you the option to remove the ads if you like the game by providing the in-app purchase.
