Hard reset did it. When I was driving and pulling over I tried the soft reset before I remove the CarPlay profile. THANK you!
IOS 17.1.2 would not let my phone complete a call, nor answer a call through a "WIRED" CarPlay connection. Nor could SIRI complete a text through the same. Whatever it did to the CarPlay software in the car radio, also caused a problem with our SIRIUS XM Radio reception (software issue) (the radio is a GM Touchscreen radio as supplied in the 2018 Equinoxes)
I had to completely shut the car off, with the phone disconnected to get SIRIUS XM back (reboot the radio).
Doing the "hard reset" fixed the problem (I have an Iphone 11) however, there is no long an Apple logo appearing, just a blank screen while the button is held in. Releasing it allows the phone to restart.

Well it worked fine from December 3 to December 13, then it started again. Tried all that I tried before and I thought maybe 17.2 would fix it but no cigar.
Then 2 days later started working as designed with no other interaction.
