Ever since the recent IOS update, my Airpods Pro won't hang up calls anymore. it just makes a bit of noise but the call is not disconnected.

Yes! Looks like the gesture changes from one press on the touch control to two quick presses. Hope this helps!
Go to bluetooth settings while your airpods are connected, click on the little blue i, change end call to "press once".
