I’ve won an IPhone 15 in a giveaway and now that I have received it, I would like to know if I can upgrade it for an iPhone 15 pro. From what I know, there is a 14 day return policy and since I am still in but the question is : will they refund on the same card that payed the phone (because it’s not mine) and is it possible to get the refund via apple gift card so I can buy the iPhone 15 pro with it ?
No. You are not the original purchaser. You can not get a 'refund' for it.
Sell it and use the funds to buy what you want.
You can get a refund via Apple Gift Card but you need the provide the receipt.
From Apple’s website:
“Gift items purchased at a retail Apple Store can be returned with an original Gift Receipt within fourteen (14) calendar days of the date of purchase. If the item is returned in the original box with the original packaging, we will exchange it or offer you an Apple Gift Card equal to the purchase price of the gift.”

I just got sent the IPhone in its package without any receipt. Can they find the receipt with the serial number ?
And if I manage to get the receipt, will I be able to get a refund ?
No. If it's returned, the money will be refunded to the original payment method. That is, the card used to buy it in the first place. Since you did not buy it, you can't get a refund for it.
