Verify a Device's Usage:

No. It will not tell you right-of-the-bat with a message or sorts in regards to the new iPhone.

So, is Find My enabled on your iPhone? If so, go here and see if it is seen: Find your Lost Apple device or AirTag with Find My - Apple Support. As it reads: "If you don't have an Apple device to use Find My, find your devices at iCloud.com/find." If they do not turn it on, then the location will not show until it has been powered back on and connected to the Internet. The location is all based on an IP Address.

"Even if they access my iMessage and new messages are coming into the old phone from my new phone and find my iPhone is on for the old phone that I still won’t get a notification about it ?"

Change your Apple ID Password:

If iMessages is set up, then yes, the other iPhone will see it. So, change the Apple ID Password. Changing your Apple ID Password would make all of this messaging stop in an instant. Go here: Change your Apple ID password - Apple Support
