i am on a trip in China and I am wondering wether to buy a MacBook pro m2 from here.
are there any software differences/issues.
I am a junior developer and live in Europe so I am worried if something will come up in the future which I did not know. Like iPhones FaceTime issues.
Any information will be very helpful.

Be aware that if you buy in China you will not qualify for AppleCare+ support in Europe. That rule once was only applied and enforced on iPhones and iPads; it has now been extended to computers as well. See section 4.1:
Warranties for other countries show the same language regarding limitations.
Also, unless you buy from a 100%-known Apple-owned store (not "Authorized reseller") chances are you will not get a new computer or worse, a counterfeit unit.
In over 20 years here seeing posts from all over the English-specaking world, what you propose makes me VERY nervous. I find the phrase "authorized reseller" loosely used outside the US, to the detriment of buyers. Why suffers when you don't need to?
If you buy at a physical store, it will probably have a Chinese Keyboard and Baidu as its default and unchangeable search engine while in China.
Outside of that, there should be no operational difference.
How do you plan on using the Chinese keyboard in your European country of residence? Make sure when you return to Europe that you declare that you are importing a computer and need to pay import duties and taxes.

If you buy from Apple's online store in China, you have a choice of keyboards as shown below. I think Chinese Pinyin is actually mostly the same as American English.
If I use vpn can I change the default search engine?
also when I leave china will it change automatically?

Once you leave China, it should allow the change in Safari's Settings. Not sure it will automatically change though.
