I have a retina 5k 2017 iMac. The Mac App Store says Sonoma is "compatible with this model." I nearly downloaded it to give it a try, but remembered what I had read about this Mac not actually being compatible. So, which is accurate?

Which actually means, you need macOS 10.3 or later to download Sonoma to a compatible Mac. It wouldn't actually download on your iMac if you tried.

FWIW, you are confusing the issue. The App Store shows my 2015 5K iMac as compatible. it isn't.
If the Mac App Store hides old versions of macOS by default, and now requires you to be running Ventura before you can download Sonoma, expect a lot of “Help!” posts from other users whose Macs can actually run Sonoma - but are on Monterey now.

No idea what you mean. No Sonoma compatible Mac requires Ventura to download Sonoma.
Note that the 27” 2017 iMac Pro can run Sonoma, unlike the 27” 2017 iMac. Similar form factor, but different machines inside.
