Since the update to IOS 17.1 the microphone button has dropped from my keyboard. I am unable to use voice texting. I do I restore the microphone button to my keyboard?

As there is no announced iOS 17.1 version available, we cannot discuss anything that might or might not involve that version here.
If you are running iOS 17, 17.0.1, 17.0.2, or the current 17.0.3, press and hold the refresh control (highlighted in yellow) and then select voice control (red):
