Features missing in Apple Watch post update

The Control Center feature wasn't removed, the way to access it was just changed in the new software version. In watchOS 10 you now simply press the side button on the watch to open up the Control Center.

The swipe up gesture which was used to open the Control Center in watchOS 9 has now been changed to open up the new Smart Stack feature.

Only the Apple Watch Ultra can have the side button's behavior altered, per Use the buttons and screen on your Apple Watch - Apple Support. So you'll want to consider a repair, the information for which is outlined at Apple Watch Service & Repair - Apple Support.

This doesn’t work for me. When I push the side button once - I get a list of apps - no control center. And, my watch is up to date. How can this be fixed?

If you're getting a list of apps, you're pressing the Digital Crown, not the side button. The side button is an oval button next to the digital crown that is almost flush with the bezel.
