My cannot give access to my mic or pictures on any app
Out of nowhere i couldn’t use my mic or share photos on instagram because the buttons to allow permission aren't there anymore

You may find apps that have requested access to the microphone or photos at Settings > Privacy & Security > Microphone (or Photos). In here you may toggle it on/off.
If the apps don't appear in the above section you may try uninstalling and re-downloading the app. Then once it's installed again try accessing the mic/photos from within the app, and choose to Allow when prompted.
If all else fails you can reset the location and privacy settings to their defaults. This would then have all apps prompt for their applicable location and privacy options again when using them, as a note. This can be found in Settings > General > Transfer or Reset iPhone > Reset > Reset Location & Privacy.
