I have just updated my operating system to Catalina. The problem I am having is when I'm using Adobe Illustrator, Photoshop, etc., I get a dialog box for Security and Privacy wanting to know if I will allow access to my Documents folder. I have never had this come up when running Mojave. What do I need to do to keep this from coming up?

You have run into the new security features that first appeared with Catalina. You are used to earlier versions of macOS where the system and apps had access to your entire system by default. As of Catalina, that freedom has been tightened as a security feature. Most apps now no longer have default access.
You need to give those apps Full Disk Access. Do this in System Preferences > Security & Privacy > Full Disk Access. Add whatever apps you want to enable there.
