I'm sorry to hear you were advised not to setup your new iPhone by transferring from your old iPhone. There were reportedly some issues with the transfer process, but only if users chose not to update the new iPhone when prompted during the setup process.
You have a few options to get this resolved:
If you have not erased the data on your old iPhone, you could choose to update the new iPhone (Update your iPhone or iPad - Apple Support), then erase the new iPhone (How to factory reset your iPhone, iPad, or iPod touch - Apple Support). It is important that you choose not to erase the eSIM on the new iPhone when prompted; if you erase the eSIM, you'll need to contact your carrier to add your eSIM later. Once the new iPhone is erased and ready to be setup, choose to transfer the data from your old iPhone.
Alternatively, if you want to avoid erasing the new iPhone that you've already set up, you can enable iCloud syncing of Mail and Photos on both your new iPhone and your old iPhone. After some time, your emails and photos will sync to the new iPhone. Here's how you can enable iCloud syncing for those apps:
- Go to Settings > your name.
- Tap iCloud.
- Tap to choose which apps you want to use iCloud.

If you have already erased your old iPhone, try enabling iCloud syncing of Mail and Photos on just the new iPhone using the same steps as above.
