How to setup the Dock to show my favourite apps, instead of recents on my Watch?

I used the Dock to keep my favourite apps I use every day on my Watch - it was a very useful and practical feature. With watchOS 10 this possibility is gone: the Dock can be used only to see my recent apps. In fact, I cannot even find the Dock in Settings! Rebut it, please, if it is not so! :(

Use the Smart Stack to show timely widgets on Apple Watch explains how to "Add, remove, and rearrange widgets," which essentially replaces the "Dock" function.
