Well, since the update, my Gmail contacts no longer synchronize between my iPhone and my Mac running the latest version of Ventura (Macbook Pro M1)
Are you experiencing any issues on your end?

I just understood what was happening!
Actually, I have an Outlook account on my iPhone. And I don't know why it created the new contacts from iOS 17 on this account instead of doing it on Gmail (which is the default account in the contact preferences).
So, I finally figured it out.

Well, yes you're right.
I meant Contacts on the iPhone do not sync with Gmail anymore 😊.
So nothing to my mac of course...
Sorry, but this doesn't make much sense.
Contact sync between the clients and server, not from client to client.
Check to see if your contacts are actually syncing between the phone and gmail's servers. Updating iOS on the phone would not impact what your Mac is doing.
