Trying to switch my number from a Samsung to a iPhone. All my other information transferred but not my number

The iPhone 15 Pro Max only uses an eSIM in the US and does not have a slot to use a physical SIM card. You will have to contact your carrier to transfer the cellular service, including your phone number, to the iPhone 15 Pro Max. Your cellular service provider will show you the process to get an eSIM activated in your iPhone.
